Meet Elizabeth Pennington Kaplan

Fifteen years ago I was diagnosed with celiac disease, a condition caused by an autoimmune reaction to gluten – a protein found in wheat, rye, barley, and oats. I later learned my three children also had severe gluten sensitivity as well as allergies to several other foods. Like many others with gluten sensitivity, I scoured the Internet to absorb as much information as possible about the disease, its symptoms, and exactly what we could and could not eat. It was a life-changing realization. I couldn’t imagine giving up bread, pasta, pizza, cereals and other family-friendly foods that were a part of our everyday lives. I asked myself: Where can we find alternatives for the foods we crave? As a trained chef, teacher and health-conscious mom, I struggled to find gluten-free substitutes that didn’t sacrifice great taste and nutrition. Most products I found were made with preservatives and refined white rice and other flours void of any nutritional value.

I realized that one of the best sources of information on living with celiac disease is from talking with others who have the disease. What I did not learn is where to find great tasting organic, gluten free products – simply because they did not exist. I decided to take matters into my own hands to help raise the bar in the gluten-free world. With whisk in hand, I put my cooking skills to the ultimate challenge – to create organic, allergy free, delicious and nutritious foods that my entire family could enjoy. Most importantly, as a busy mom with limited time to prepare meals, the recipes needed to be quick and easy to make. After several years of experimenting in the kitchen and stellar reviews from family and friends, I’ve developed a delicious new line of baking mixes from organic, nutritious, whole grain flours high in fiber and omega 3s together with unique recipes that provide limitless possibilities for creating pancakes, waffles, cookies, crepes, muffins, breads, scones, cakes and more.
