Gluten-free Waffles: Buckwheat Flax or Old Fashioned Mix
Ingredients For Waffles: 1 1/3 cup Old Fashioned Pancake and Baking Mix or Buckwheat Flax Pancake and Baking Mix 1 egg (or equivalent egg replacer: whisk 1 teaspoon chia seeds mixed with 2 tablespoons hot water, let sit for 5 minutes and whisk again) 1 cup milk or choice (coconut, almond or rice milk) 1 t. vanilla 1 T. vegetable oil or melted coconut oil
Instructions: Place pancake mix in large bowl. Make a well in the center of the dry ingredients and add the egg or egg replacer, milk, vanilla and oil. Whisk together until well combined. Prepare waffles as indicated by waffle iron manufacturer.

Who doesn’t LOVE crêpes? After some experimenting, prepare crêpe batter according to package directions. Add ¼ cup Dutch process cocoa and 1 teaspoon sugar to batter. Blend well. Prepare crepes, placing between wax paper or on separate plates. Enjoy!
