• 2 1/3 cups The Pure Pantry All Purpose Baking Mix
• 1/4 cup sugar
• 1 tsp. baking powder
• 1/4 cup cold butter cut into small pieces (or butter alternative such as Earth Balance)
• 1 egg, beaten (or equivalent egg replacer such as Ener-G Foods Egg replacer)
• 2/3 cup milk (or rice milk, coconut milk)
• 2 tablespoons water
• 1/2 cup dried cranberries
• 1 tbsp. orange zest

Yield: 10 large scones
Preheat the oven to 350°
Combine baking mix, sugar and baking powder in large bowl. Grate the cold butter into the bowl using the large holes of a hand held grater. Using your fingers, combine the butter with the dry ingredients until no lumps of butter remain. Add the milk, water, cranberries and orange zest (to get zest from orange, use a fine grater and just grate the orange part of the fruit until you get approximately 1 tablespoon). Stir with a fork to combine. Using a large spoon, drop the dough onto a greased cookie sheet to make 10 scones. Scones will spread while baking. Bake for 15-17 minutes until lightly browned. Cool and enjoy with butter, strawberry jam, lemon curd or any other favorite spread.
