Summary: Gluten-free, Dairy free, Vegan Makes 8-10 Pancakes
Ingredients: 1 1/2 cups The Pure Pantry Old Fashioned Pancake Mix 1/4 cup chia flour (ground chia seeds) 1 3/4 cups milk of choice (rice, almond or coconut) 1 tablespoon coconut oil melted or at room temperature 3/4 cup toasted coconut , reserve 1/4 cup for topping
Instructions: Combine pancake mix and chia flour in a medium bowl. Whisk in milk and coconut oil.
Fold in 1/2 cup toasted coconut and reserve the remaining 1/4 cup for topping.
Scoop 1/4 cup batter onto greased griddle or pan on medium-low heat. Cook for 2 minutes or until tiny bubbles on top of pancake pop and sides are brown. Flip and cook approximately 45 seconds.
Top stack of pancakes with vanilla coconut yogurt, bananas or other fruit, and sprinkle with toasted coconut and serve.

Who doesn’t LOVE crêpes? After some experimenting, prepare crêpe batter according to package directions. Add ¼ cup Dutch process cocoa and 1 teaspoon sugar to batter. Blend well. Prepare crepes, placing between wax paper or on separate plates. Enjoy!
