
Gingerbread Waffles with Pecan Butter and Cinnamon Poached Pears

Ingredients For Waffles
1 1/3 cup Old Fashioned Pancake and Baking Mix or Buckwheat Flax Pancake and Baking Mix
1 t. cinnamon
1 t. ground cloves
1 t. ground nutmeg
1 T. ginger
1 egg (or equivalent egg replacer)
1/4 c. blackstrap molasses
1 cup milk (coconut or rice milk)
1 t. vanilla
1 T. vegetable oil or coconut oil
Instructions
Whisk together pancake mix, cinnamon, cloves, nutmeg, and ginger in large bowl. Make a well in the center of the dry ingredients and add the egg, molasses, coconut or rice milk, vanilla and oil. Whisk together. Prepare waffles as indicated by waffle iron manufacturer.
Ingredients For Pecan-Agave Butter
1/4 c. cold butter (or Earth Balance), cut into small pieces
1/4 cup brown sugar
1/4 cup agave nectar
1 t. cinnamon
1/4 t. nutmeg
1/2 c. chopped pecans (or walnuts)
Instructions
Using a fork, mix butter with brown sugar, agave, cinnamon and nutmeg. Add pecans and combine. Set aside.
Ingredients For Cinnamon Poached Pears
2 D’Anjou Pears, cored removed, cut into quarters
2 T. agave nectar
2 T. brown sugar
1/4 cup butter or coconut oil
Instructions
Combine the agave nectar, brown sugar and butter or coconut oil in sauté pan over medium heat. Let cook, stirring constantly, for 2 minutes.
Add pears and gently toss while sautéing the fruit. When pears are soft, after about 3 minutes, serve over hot waffles and top with 1 tablespoon of pecan-agave butter.
