Gluten-free tamale pie

Summary:  This is a classic kid’s dinner that is easy to prepare in advance and put in the oven 20 minutes before you’d like to serve dinner.  Serve with green salad or steamed veggie.

Ingredients

  • 1 1/2 lbs ground turkey
  • 1 tsp olive oil
  • 1 small yellow onion
  • 2 cloves minced garlic
  • 2 cups gluten free tomato sauce
  • 1 cup frozen corn kernels
  • 1 tsp sea salt
  • 1 tsp cumin
  • 1 tsp onion powder
  • 2 cups yellow corn meal
  • 1/2 cup The Pure Pantry All Purpose Baking Mix
  • 2 cups water
  • 1/2 cup milk or plain rice milk
  • 1 tsp salt
  • 1 3 oz. can green chiles (optional)
  • 1 cup shredded cheddar cheese, divided, (optional)

Instructions

Cook turkey over medium heat in skillet.  Drain off liquid and set cooked turkey aside.  Heat olive oil in skillet.  Add diced onion and minced garlic and sauté until tender.  Add tomato sauce, corn, salt, cumin and cooked ground turkey.  Stir all ingredients until combined over medium heat. Remove from heat.

Combine cornmeal with All Purpose Baking Mix in medium sauce pan.  Add water, milk and salt.  Cook over medium heat for 2 minutes while stirring. This step can also be done in a microwave proof dish.  Add chiles (optional) and ½ cup cheese (optional).  Stir until combined.

Grease the bottom and sides of a 9 x 12 pan with olive oil.  Pour turkey mixture in the bottom of the pan.  Top with corn meal mixture.  Top with 1/2 cup shredded cheddar (optional).  Bake for 20 minutes at 350°F or until top is golden brown.  Cool slightly before serving.
