Dairy free / Vegan option. Serves 4.
- 1 recipe crepe batter from Old Fashioned Baking Mix (see package for directions, see options for vegan)
- 1/4 cup Dutch process cocoa (unsweetened)
- 1 teaspoon sugar
- 1 tablespoon butter or coconut oil
- 2 teaspoons agave nectar
- 2 ripe d’Anjou pears, peeled, cored and sliced
- 1 teaspoon cinnamon
Garnish: Grated dark chocolate
Prepare crêpe batter according to package directions. Add ¼ cup Dutch process cocoa and 1 teaspoon sugar to batter.
Blend well. Prepare crepes, placing between wax paper or on separate plates.
For filling, melt butter in saucepan. Add agave nectar and cook over warm heat until bubbles form. Add pear slices and sauté over low heat for 2 minutes. Sprinkle with cinnamon.
Fill crepes with several pear slices. Roll up and grated chocolate on top. Whip cream can be added if desired.
