Gluten Free English Toffee Bars

Summary: Serves: approximately 24- 2 inch bars

Ingredients

1 cup light brown sugar
2 sticks of butter softened
1 egg
1 teaspoon vanilla
2 cups of The Pure Pantry All Purpose Baking Mix
12 ounces of melted chocolate bars
3/4 cup of finely chopped almonds

Instructions

Preheat oven to 350 degrees.

Using an electric mixer, beat the butter and brown sugar until creamy.  Add the egg and vanilla.  Slowly add The Pure Pantry All Purpose Baking Mix and mix until well blended.

Spread the batter on an ungreased cookie sheet, leaving a two inch border on all sides, to allow the cookie to spread.  Helpful Hint:  Use oiled parchment or waxed paper over the batter and spread the batter on the cookie sheet using a mini rolling pin or your fingers.  Bake for 15-20 minutes.  Let cool.
Melt the chocolate bars in a double boiler and spread on the cooled cookie. Top with the chopped almonds.  Cool the finished product in the refrigerator.  Cut the bars as desired.
