Gluten Free Chocolate Chip Cupcakes

Ingredients

2 cups of The Pure Pantry Chocolate Chip Cookie Mix
1 tablespoon sugar
1 tablespoon cocoa powder
2 teaspoons instant coffee (optional)
2 large eggs
2 tablespoons canola oil
1 teaspoon vanilla
1/2 cup milk

Instructions

Preheat oven to 350 degrees.  Combine the cookie mix, sugar, cocoa and instant coffee in a large bowl.  In a separate bowl, combine the eggs, canola oil, vanilla and milk.  Add the wet ingredients to the bowl with the dry ingredients. Mix thoroughly.  Fill the greased muffin tins 3 quarters full. Bake in the preheated oven for 15 minutes.
