Gluten Free Irish Soda Bread

Ingredients

2 cups organic gluten-free All Purpose Baking Mix from The Pure Pantry
1/2 cup amaranth flour or millet flour
2 tablespoons flax seed meal
1/3 cup gluten-free rolled oats
2 teaspoons baking soda
1 teaspoon kosher salt
1/2 cup currants
2 cups coconut milk, such as So Delicious unsweetened variety

Instructions

Preheat the oven to 375˚. Grease a baking sheet and lightly dust with baking mix or rice flour.

Combine baking mix with flax meal, amaranth or millet flour and rolled oats in a large bowl. Stir in baking soda and salt. Add currents and stir.

Make a well in the center of the dry ingredients and pour in the coconut milk. Mix until all ingredients are wet but do not over mix. Turn the dough out onto the baking sheet. Shape dough into round mound about 4 inches high. Cut a cross on top of the bread with a sharp knife.

Bake until golden brown, about 50 minutes.
