Gluten-Free Apple Oat Cake

Ingredients

  • 1/2 c. safflower oil
  • 1 cup dark brown sugar
  • 1 cup The Pure Pantry All Purpose Baking Mix
  • 1/2 cup almond meal or gluten free oats
  • 1/2 cup chopped dried apples or 1/2 cup chopped fresh apples
  • 1/2 cup raisins
  • 1 t. cinnamon
  • 1 t. nutmeg
  • 1 t. vanilla
  • Instructions

    Preheat oven to 350 degrees.

    Blend oil and dark brown sugar in medium size bowl.  Add baking mix, almond meal or oats and stir.  Add apples, raisins, cinnamon, nutmeg and vanilla.  Mix until combined, but do not over stir.

    Grease loaf pan or muffin tin. P lace mixture in pan or muffin tin.  Bake for 25 minutes for muffins and 30 minutes for bread.  Let cool for 10 minutes before turning over onto wire wrack to cool completely.

    Casein Free- Dairy Free (vegan) Vanilla Glaze

    • 2 cups powdered sugar
    • 2 tablespoon cold water
    • 1 tablespoon vanilla
    • 2 tablespoons agave nectar or honey
    • 1 tablespoon Earth balance margarine

    Instructions

    In a large mixing bowl with paddle attachment blend cold water, vanilla, agave and margarine.  Sift powdered sugar into bowl. Blend on low speed until combined.  If too dry add 1 teaspoon cold water. If too wet, add 1 tablespoon more sugar.  Drizzle glaze over bread or muffins.
