Gluten-Free Cheddar Biscuits

Ingredients

  • 2 cups The Pure Pantry All Purpose Baking Mix
  • 1 tsp. baking powder
  • 1/2 tsp. sea salt
  • 1/4 cup cold butter (or butter alternative such as Earth Balance)
  • 1/2 cup buttermilk (or rice milk with 2 tsp. cider vinegar)
  • 1/2 cup water
  • 1 beaten egg
  • 1/2 cup grated cheddar cheese (optional)
  • 1/2 tsp. onion or garlic powder
  • 1/2 tsp. finely chopped chives (optional)

Instructions

Preheat oven to 350°. 

In large mixing bowl combine baking mix and baking powder. 

Grate the butter into the flour mixture with the large hole side of the grater. Using your fingers, mix the butter into the flour so that there are no lumps of butter.  Add the buttermilk (or rice milk and vinegar) water and beaten egg to the flour and combine with a fork.  Add the cheese (optional), onion or garlic powder and chives, if desired.  Do not over stir. 

Using a large spoon, drop the dough onto a greased pan to make 10 biscuits. Bake at 350 for 15 minutes.
