Green Beans with Sundried Tomatoes and Pine Nuts

Serves 6
Ingredients:
2 ½ lbs fresh French green beans (haricot vert)
10 sundried tomatoes in oil, sliced (reserve 1 tablespoon of the sundried tomato oil)
2 garlic cloves, minced
½ cup chopped fresh basil plus 2 tablespoons for garnish
2 tablespoons extra virgin olive oil
½ teaspoon sea salt or fleur de sel
½ teaspoon fresh ground pepper
½ cup pine nuts, toasted
1. Steam green beans until they are just tender but still crisp.
2. Place green beans in bowl and toss with vinegar, sundried tomato oil (reserved from jar) olive oil, garlic, chopped basil, salt and pepper. Place on platter and top with toasted pine nuts and garnish with chopped basil.
